As the head chef at the Carlton Hotel Kinsale I make sure to source local, seasonal produce to use on all our menus. I like to blend the best that North, South, East and West Cork has to offer, and showcase these products on all our menus. With Kinsale being the Gourmet Capital of Ireland and West Cork known as the bread basket of the country, producing some of the finest artisan produce, I like to showcase as much of this to our local and international guests alike
To get the staff more involved I have started taking my Chefs and the Front of House staff on Farm to Fork tours. I have posted some of the photos of our trips on our Facebook page so make sure to check it out for more information on what we've been up to!
We are launching our new menus this week with a vision to show off our hotel's scenic location with our food. A Breath-taking view of Oysterhaven Bay from the Rockpool Bar & Restaurant, where the land meets the sea, is the inspiration for our new menus; featuring local fish, free range eggs, cheeses, lettuces & herbs, beef, pork and much more! While you're at the hotel make sure to check out the Rockpool Bar where you can soak up the bird's eye view overlooking Oysterhaven Bay and Kinsale whilst enjoying our local brew - a smooth pint of Murphys. Try out our new bar menu served until 9pm or the Rockpool Restaurant where our ‘Hot Rock Menu' is certainly worth a look at. Our motto for the rock ‘Your Food the Way you like it' is certainly proving to be a hit. Choose from yellow fin tuna, dry aged West Cork beef, fresh scallops and prawns, East Ferry duck breast and much more. Cooking food on Volcanic Rock at 440 degrees is certainly going to get your temperature soaring.
